What I'm Loving Wednesday

I absolutely love reflecting on what I'm loving every Wednesday!
I am always able to reflect on everything I should be thankful for.

- I'm loving the yummy meals I have cooked this week! Monday we had Pesto Chicken Casserole. It was really good and it was nice to have something different. I am going to start a recipe page on my blog, but I am also going to post the recipes here too!

Pesto Chicken Casserole
Ingredients:
-2.5 cups of cooked chicken, chopped
-1 10oz. can of cream of chicken
-1 cup of packed sun-dries tomatoes, cut into thin strips
-1/3 cup of mozzarella cheese
-16 oz package of bow tie pasta, cooked
-1 small jar of pesto
Combine chicken, cream of chicken, pesto, sun-dried tomoatoes, and bow tie pasta. Place in a lightly greased baking dish. Bake 45 minutes at 350 degrees. After 30 minutes, sprinkle cheese on top. Cook for about 15 more minutes.
Delish!
Tuesday night we had Brown Sugar and Balsamic Glazed Pork Loin. This is so easy and so delicious! All you need is a crock pot.

Brown Sugar and Balsamic Glazed Pork Loin
Ingredients:
1 (2 pound) boneless pork loin
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder
1/2 cup water
Glaze:
1/2 cup brown sugar
1 tablespoon cornstarch
1/4 cup balsamic vinegar
1/2 cup water
2 tablespoons soy sauce
Combine salt, pepper, and garlic powder. Rub over roast. Place in crock pot with 1/2 cup of water. Cook on low for 6-8 hours. About 1 hour before roast is done, combine ingredients for glaze in a small sauce pan. Heat and stir until mixture thickens. Brush roast with glaze 2 or 3 times during the last hour of cooking. Serve with remaining glaze on the side.

-I am also loving that we will be celebrating another sister's birthday this coming weekend. We are having the lady that made the groom's cake at our wedding, make a cake for Rosie's birthday. I am so excited because Josh and I didn't get any of his groom's cake. I know, sad story. We are also moving my other sister in to college Saturday morning. It will definitely be an emotional but great day!

-I am loving the book I am reading...THE HELP! I am taking my time reading it becuase I don't want it to end. I always get so into books. I feel like the characters become my friends. I am not ready for them to go away yet! But, I do want to see the movie soon! It looks so good. Are the any other must-reads you would suggest?

-I am still loving the thought of fall. The heat has got to go! I can't get over how hot it is everyday. I am ready for it to cool off so I can wear stuff like this~

-I am loving my life and my loving husband! I am so thankful for a husband that makes our bed everyday, mails letters for me, puts stuff in the crock pot before work, gives me a big hug everyday when he gets home, listens to me talk the entire time we walk every night, watches the bachelorette with me (he thinks Ryan will be the next bachelor), and just loves me for the way I am. He's just the greatest.
